The Ekka may have rolled into town but it’s show time all year round here at Chez Nous Catering. Read about the wild ride we’ve been on over the last few months and what twist and turns you can expect ahead. Buckle up!

SCA’S ‘AUDIO HQ’ LAUNCH BRIEF HEARD LOUD AND CLEAR

Chez Nous Catering’s longstanding radio client Southern Cross Austereo put the call out to provide an exceptional food and beverage offering befitting the launch of Audio HQ, Hit 105 and Triple M’s spectacular new home and “the country’s most advanced radio super studio”. Our team heard the brief loud and clear and mastered a menu to match!

With two top stations celebrating their new home, the catering called for more of the same and so it was only fair we delivered a stunning DIY Ink Gin infusion station along with an elaborate grazing station showcasing a mix of Australian and European cheeses, artisan cured meats and antipasti.

On the breathtaking Audio HQ rooftop, we took canapés to the next level with a delicious lineup of Moreton Bay Bug Brioche Sliders, Petite Fillet Mignon and Porcini Mushroom Arancini.

Back inside, we customised light bites to suit each of the dedicated zones; Gourmet Mini Hot Dogs for the Triple M area, Mini Bao Buns with Crispy Chicken for the Sound Room and Madders Brother’s desserts for the Hit 105 section. Beverages were also themed to suit, including a Triple M beer tasting bar.

Needless to say, our catering was a smash hit with the 200 guests in attendance. Our team was thrilled to receive personal compliments (and happy snaps) from comedian Dave Hughes who joined a host of well-known personalities at the launch, including Brisbane-born pop duo The Veronicas who performed on the night.

CATERING IN TOP FORM FOR LAMINEX LAUNCH

The Chez Nous Catering team proved they were in top form when a very directional catering brief surfaced for the launch of a new Laminex product range staged at The Joinery.

No stone was left unturned when designing the dynamic menu offering which heavily focussed on presentation, reflecting the tones and textures of the products being launched.

 

Freshly-shucked Oysters with Ginger and Finger Lime Mignonette and Mini Poke Cornets captured a moody, mineral and marble aesthetic reflective of one range.

Porcini Arancini with Cavola Nero Crema and Basil Pesto; Poached Chicken Betel Leaf Parcels with Roasted Coconut, Peanuts and Lime; Pork Belly Skewers with Vietnamese Caramel Sauce and Ruffled Cucumber; and Beef Carpaccio Crostini with Wild Rocket, Shaved Grana Padano & Crema di Balsamico delivered an earthy, woodland vibe with pops of greenery contrasted against woody brown tones.

Continuing the woodland theme, the serving of substantial fork food unearthed Veal and Truffle Ravioli along with Pulled Lamb Shoulder with Labne, Mixed Greens and Pomegranate Molasses.
Things moved up a notch when it came to dessert, with a carefully curated selection of petit fours delivered via a custom-designed Laminex conveyor belt. A decadent mix of embellished macarons, Mini Raspberry & White Chocolate Eclairs, Mini Marbled Meringue Nests with Summer Berries and colour-matched Pyramid Chocolates carried a stunning pastel and metallic aesthetic.
